Varieties: Monemvasia 50%, Kydonitsa 25%, Assyrtiko 25%

Wine making process: The most mature grapes of the three varieties are selected and placed in the sun for a week to dry. By that way, the moisture is evaporated and at the same time the natural sugars are concentrated. They are vinified and the fermentation stops when the alcohol is around 13% and the unfermented sugars are 150g/lt. It is placed in oak barrels for at least 3 years.

Organoleptic Characteristics: Dark amber color, intense aroma of honey and warm spices, cinnamon, all spice and roasted nuts. High acidity and long, intense aftertaste.

Harmony of flavors: Served at 8-10οC and can accompany perfectly rich flavored desserts. It will pleasantly surprise you when tasted along spicy, salted cheeses and roasted nuts.
