Wine making process:
In the middle of September, semi-matured grapes are harvested from Mavroudi variety. After sorting and destemming them, they pre-ferment in cold soak for 1 day at 8-10°C and then are fermented in a temperature controlled environment for 8 to 10 days. It remains in stainless steel tanks for three months and then bottled and ready to be enjoyed. It is Mavroudi in its younger version.
Organoleptic Characteristics: Bright red color, aromas of fresh berries and wild cherries. Medium body and soft tannins in the mouth. An ideal wine for the non –red-wine lovers!
Harmony of Tastes: Best served at 14o to 16oC. It accompanies beautifully tomato-based foods, roasted meat and you will be pleasantly surprised when enjoyed with an oily fish such as salmon.
